Guillaume Allies fashions brisk and saline Picpoul from vineyards situated on the edge of the Thau Lagoon and thus influenced by limestone soils and Mediterranean sea breezes. Zippy and vibrant, it’s Pic-pic-pic-perfect as an aperitif wine, or with the traditional pairing of seafood (especially anchovies!) and shellfish, but it’s also the perfect accompaniment to assertive cheeses and charcuterie.
